We already have an answer to that question. Whatever we did during WW2. Just like then we would take up the slack, move out of our comfort zones, learn new things, and while there would definitely be some glitches, emotional trauma, and some collapse here and there, ( because a lot of us would miss the men we loved) we would probably be alright. The existence of civilization doesn't depend on the existence of only one gender.
