I think you’re perhaps overthinking this one. I always took it to mean that the person with their mouth open the widest (doing the most talking) is often trying to hide, or just distract, people from some other parts of their character.

They think if they’re loud enough, and speak confidently enough, you won’t be able to see their desperate need for your attention. For some people your attention serves their identity.
