I do feel for your situation. I'm sorry this happened to you. I don't know what to think or do about the aging Fox news viewer.
But you should also know you're not alone in this. Thousands of people are going through this with their loved ones, too. I don't have any advice other than perhaps trying again, but use a different tactic.

The only way she was able to get some of her father back was to cut him off Foz news. That may be what you have to do for your mom. Cut off her cable for a couple of weeks and see what happens.
If it's any consolation, it is extremely easy to get caught up in someone else's way of thinking about the world, and the people in it, especially if you hear it often enough, for long enough. There was a woman I used to watch on Youtube, that I enjoyed listening to, who was quite incendiary, but when I caught myself thinking things about people, that echoed some of the things she said on her show, I had to unfollow her. I was lucky. I've spent an entire lifetime engaging in self-reflection. I can recognize when a certain way of thinking is not my own. Not everyone can do that, or even see it.
